

Victor Francis Giancola, age 79, of Eden Prairie, Minnesota, died peacefully on Thursday, December 11, at the Minnesota Veterans Home, Minneapolis with his wife, Robbin, and his son, Ben, at his side.
He proudly served in the U.S. Army during the Vietnam War as a dog handler, and was awarded many medals, including a Bronze Star. Victor built a successful career as a chef and restaurateur, owning and operating several restaurants. He was an artist and talented craftsman who could create anything with his hands: a cook, an upholsterer, a welder and a woodworker. He fashioned dozens of upholstered baby chairs for family and friends. When it came to fixing something, the words “I can’t” were not in his vocabulary. Victor had a lifelong love of baseball and took as much joy watching kids play as he did watching the majors.
Victor was born January 9, 1946 in Bronx, New York, the second child of Victor and Catherine Giancola who immigrated to the United States from Italy as children. He is preceded in death by his parents and his sister, Patricia. Victor held his Italian heritage close to his heart throughout his life.
Victor cherished his family deeply and is survived by the love of his life, Robbin, his son, Ben (Jennifer) and his granddaughter, Camille. In addition to his immediate family, he is survived by Robbin’s brothers and sister, Barry (Kitty) Farrell, Mike (Bernie) Farrell, and Mary (Andy) Warner and many nephews, nieces, great nephews and nieces, numerous cousins and countless friends.
Victor will be remembered for his warmth, generosity, and devotion to family and community. In his later years, he volunteered for Disabled American Vets and The Minnesota Vets Home, giving back to those who served. Victor’s legacy will live on with memories of the wonderful meals he prepared, for his big heart, his vibrant sense of humor, and for his ability to tell a story. Victor was always a friend to the downtrodden and had a resounding zest for life that brought joy to so many.

Visitation on Saturday, April 25, from 9:30-10:30 a.m. followed by Mass of Christian Burial at 10:30 a.m. at The Church of the Incarnation, 3801 Pleasant, Minneapolis, MN.
Luncheon to follow at Jax Café, 1928 University Avenue NE, Minneapolis from 12:30 - 3:30 p.m.
Interment at Fort Snelling National Cemetery at 11:00 a.m. on Monday, April 27, 2026.
All memorials will be given to The Family Council of The Minnesota Veterans Home, Minneapolis.
